Default Sweet and Sour Red Cabbage

Sweet and Sour Red Cabbage

Ingredients:
1 medium head red cabbage
2 tablespoons sugar
2 teaspoons salt
4 slices bacon
1 medium onion

Fry bacon and onion - not till crisp. Set aside. Do not throw out the bacon and onion drippings (grease).

Cut cabbage in fairly large pieces. Cover with water, add sugar and salt, boil till tender.

Drain cabbage, add bacon, onion and grease.

Toss -- ready to serve.

Makes 8 servings

This was one of my mother's favorite recipes. She would make it for a Sunday meal for my DH, me and herself. That way she had leftovers for Monday and Tuesday for an easy meal after coming home for work.

She would fix a brisket of beef - again left overs for her.

It would go good with chicken or roast beef too.

When I make this I also use 1 tablespoon of cider vinegar. (the sour part)and only 1 tsp salt. It is a holiday staple at our house. (Christmas, Thanksgiving, and New Years. Also Jakes unbirthday.)

We love Red Cabbage at our house!!!
