Default Zucchini..Love it or Hate it?

I love Zucchini. Raw..served with ranch dressing, or used instead of chips, with salsa, steamed with basil and onions, made into breads or muffins, grown large and stuffed with chili and cheese, or meatsauce. Or prepared like eggplant parmesan. Or grilled on the BBQ,(dip in orange juice mixed with soy sauce, yum) or sliced thin and breaded and fried, or cut in sticks and battered and fried.

Any ways of cooking this vegie that we need to know about??

Bunti, I think you 'bout covered it. Cut in half with a little butter and salt and pepper and put in the microwave is good and simple. Cooked with some stewed tomatoes is good too. I love zucchini bread.

I just remembered a terrific appetizer recipe that I am gonna run over to the appetizer area to post. It is zuccini sesame quiche squared. It is very yummy and can be made with egg beaters to cut the fat.

I always put chopped zucchini in my homemade stewed tomatoes... along with celery, peppers, onions, & leek.
