DH loves Vichyssoise.

If you are interested, I can post the receipe. It's made with Potato buds rather an real potatoes.

Here's one Gazpacho Recipe!

Makes 4-6 first course servings

1 small-medium cucumber chopped
1 medium red or white onion chopped
1 avacado chopped
1 tsp oregano
3 Tbs oilve oil
2 Tbs red wine vinegar
1 24 oz can V8 juice
1 24 oz can tomato juice
1 small can diced green chiles
salt & pepper to taste
1 Large ladle of your favorite med-hot salsa--preferably home made!

Chill & serve garnished with lime wedges & chopped fresh cilantro, a dollop[ pf sour cream & an avacado slice on top!

I usually make a batch of salsa and have that on hand as well, which REALLY adds the flavor to this soup!

I'm searching for the recipe my neighbor in Spain gave me way back when. It's my favorite! I remember what goes in it, but not the amounts!

Default Chilled Strawberry w/ pink peppercorn & creme fraiche Soup

Soup
  • 4 cups fresh strawberries
  • 1 cup white grape juice
  • 1 cup plain yogurt
  • 1 ¼ cups fresh cream
  • 1 tablespoon honey
  • ¼ cup Frangelico
  • 1 teaspoon pink peppercorns
  • nutmeg
Garnish
  • 12 large strawberries, sliced
  • ½ cup crème fraîche
  • edible flowers
  • pink peppercorns
  • fresh mint
In a blender or food processor puree the strawberries with the grape juice. Set aside ½ cup of the puree to use as garnish. Add the remainder of the soup ingredients and puree. Adjust the seasoning and chill well. Adjust the seasoning again before serving.

Serve the soup in a chilled bowl. Use a ring mold to arrange the sliced strawberries in the center of the bowl. Fill the strawberry ring with crème fraîche. Pour the soup into the bowls and garnish with drops of the reserved strawberry puree and more crème fraîche. Finish garnishing with edible flowers, pink peppercorns and fresh mint.

That's one of my faves. Now I have another one that is Apple and Peach cold soup. Got that recipe back at home. I'll post that one later.
