 Easy Cold Soup Recipe
Summer Fruit Gazpacho
1 whole cantaloupe -- cubed
1 Orange -- juice of
1 Lime -- juice of
2T Brown sugar *
2T Spiced dark rum **
2 C Raspberries, strawberries or blueberries (any or all to equal 2 cups)
1 C watermelon cubes
Sour cream ***
Cinnamon
Lemon or orange slices; or fresh mint
Puree ½ the cantaloupe, and ½ the berries with juice of 1 orange, juice of 1 lime, spiced rum, and the sugar. Pour into a serving bowl and add rest of the cubed cantaloupe, blueberries, raspberries etc and cubed (seeded) watermelon. Taste and add sugar depending on the ripeness of the fruit used. Divide into small dessert bowls or Teacups.To serve, add a small dollop of sour cream to each bowl, sprinkle with cinnamon, and garnish with citrus slice or mint if available.
*Works well with sugar substitute.
**The spiced rum really gives a special zip to this fruit soup. It is okay without the Rum, but use extract if you can. If you use extract or omit completely, add 1 tsp cinnamon to the puree.
*** Can use light sour cream, or substitute reduced or no-fat vanilla yogurt for the topping.
Makes 10 small or 6 large servings. Total recipe is about 800 calories with the rum, sugar and sour cream. About 500 with yogurt, extract and sweetener. It packs a nice antioxidant punch too!!
