Hi Mango French onion soup is easy. Sometimes I'll just cook a bunch of onions, add beef broth and pour it over the french bread and cheese. The recipe I posted is good but sometimes I don't go thru all of that. I love French Onion soup. I'll make it just for me even if DH is gone, although he likes it, too.

Sounds like and easy way to have french onion soup i'll have to try that.

Pea Soup with yellow peas:

Ham bone in large kettle
fill with water, add chopped onions and celery, and celery leaves
I just put on stove and cook at least 1/2 day
Pour liquid through strainer into a large bowl, toss onion and celery, and
return liquid to kettle.

Add fresh chopped onion and celery and some finely chopped carrots.
Add 2 bay leaves
Add bite sized ham, (from leftovers)
Add 3-4 bags of yellow peas, rinced, and cook several hours till
thickened.

Sorry I don't have exact amounts. The bags of peas depends on how
thick you want your soup and how big the kettle is. I like it thick and
will often add the 4th bag after it has cooked down the peas for a while
Onion, celery, and carrots are to your taste. I like the carrots because
they add a little color to the soup.

I divide in small containers and freeze so we can enjoy it all winter!

All of these soups are perfect for the winter. I'm not ready for winter, but ready for the soups.

Default Cabbage Soup

Great for those cold winter evenings.

1 pound Ground turkey
1 pound Ground round
1 teaspoon Natures Seasonings
2 medium onions, chopped
1 can diced tomatos, 14-1/2 oz.
2 cans kidney beans - light and dark
1 can black beans
2 tablespoons flour, all-purpose, sifted
1 can beef broth
1 cup water
1 cup homemade tomato sauce (optional)
1 1/2 medium cabbage, chopped very course
3 teaspoons garlic, minced
1 teaspoon salt
1 teaspoon garlic salt
1/2 teaspoon pepper
1 teaspoon Maggi Seasoning
1 teaspoon cumin
1/2 teaspoon chili powder

Lightly brown ground round and turkey in a small amount of olive oil, sprinkling garlic salt and Natures Seasonings over meat. Remove, drain, and set aside. In a 5 quart pot, saute onions and garlic in a small amount of butter and olive oil. Add flour and continue to stir. Add all other ingredients and heat to low boil. Reduce heat to simmer for thirty minutes. Excellent when reheated.

Default Bongo Bongo soup

Here is the recipe from Trader Vic's for their famous Bongo Bongo soup.

It's great for holidays or a special treat.

1 1/4 quarts Half-And-Half
1 1/4 pounds Oysters,Pacific,drained, poached, pureed
1/2 cup spinach,baby food,strained,creamed
1/4 cup Butter
2 cloves garlic,minced
2 teaspoons Msg (Monosodium Glutamate)
1 tablespoon A-1 sauce
1 teaspoon salt
3/4 teaspoon pepper
1/4 teaspoon cayenne,(generous dash)
1 1/3 tablespoons Cornstarch mixed with 2 tsp cold water
1 1/3 cups Heavy Cream,whipped

in a large saucepan, heat half and half just to simmering
add oyster puree, spinach, butter, garlic, msg, A-1, salt, pepper, and cayenne
heat to simmering, whisking until smooth DO NOT BOIL
add cornstarch mixture and heat and whisk until soup is slightly thickened
correct seasoning
ladle into heatproof serving bowls
top each with a spoonful of whipped cream
slip under broiler until cream is well glazed.

Thanks for posting both of these soups.....I will be trying them soon!!! I hope that the MSG isn't essential to the Bongo Bongo though...DH has a sensitivity to it.

You may want to not try the Bongo Bongo soup. The cabbage soup is one of my DW and my favorites. I normally make a double batch, and freeze portions in baggies. I make this soup at least three times in the winter.
