Default Gazpacho anyone?

This is my grandmother's gazpacho recipe (most of my recipes are hers...).

Ingredients

Put the following ingredients in the food processor:
  • 1 can tomato juice (one of the larger cans)
  • 1 box diced tomatoes
  • 1 green pepper (small)
  • 1 cucumber (peeled)
  • 2 cloves garlic
Add the above to the rest of the ingredients after processed:
  • 1/4 cup olive oil
  • 1/4 cup vinegar
  • Salt and pepper to taste
  • A few drops of hot sauce (optional, to taste)
A hint: the longer this sits in the refrigerator, the better it will taste! While you can eat it right after making it, it will taste much better if you let it sit in the refrigerator for a day or two.

That's very similar to mine, except I use V8 juice instead of tomato juice.

I have to ask, what is a "box" of diced tomatoes? Not a can?

We like to have some bowls of chopped to vegetables to add at the table ... cucumber, celery, tomatoes, green onion, cilantro ... what ever you like.

Still can't find that darn recipe! It's the authentic Gazpacho Andalucia that I fell in love with in Spain.
