Default Potato Cheese Soup

3 or 4 medium potatoes (cut up)
2 cups boiling water
----------------------------
3 cups whole milk (4%)
----------------------------
2 tablespoons butter
1 small onion, finely chopped
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon cayenne pepper
-----------------------------
1 cup grated Cheddar cheese
-----------------------------
Potato chips (crushed) and freshly chopped chives

Add potatoes to boiling water and cook until fork tender. (Just the opposite of how potatoes are normally cooked.) Drain off almost all of the water and mash the potatoes coursely. Add milk and heat to a simmer.

In another pan melt butter, add onion and simmer until onion is transparent. Add flour and seasonings. Combine with potato mixture and simmer gently, stirring about every 5 minutes for about 20 minutes.

Add cheese and beat until smooth.

Serve it hot in individual bowls. Top each with crushed potato chips and chives.

Note: Plenty for 4 hungry folks!
