Bongo Bongo soup Here is the recipe from Trader Vic's for their famous Bongo Bongo soup.
It's great for holidays or a special treat. 1 1/4 quarts Half-And-Half
1 1/4 pounds Oysters,Pacific,drained, poached, pureed
1/2 cup spinach,baby food,strained,creamed
1/4 cup Butter
2 cloves garlic,minced
2 teaspoons Msg (Monosodium Glutamate)
1 tablespoon A-1 sauce
1 teaspoon salt
3/4 teaspoon pepper
1/4 teaspoon cayenne,(generous dash)
1 1/3 tablespoons Cornstarch mixed with 2 tsp cold water
1 1/3 cups Heavy Cream,whipped in a large saucepan, heat half and half just to simmering
add oyster puree, spinach, butter, garlic, msg, A-1, salt, pepper, and cayenne
heat to simmering, whisking until smooth DO NOT BOIL
add cornstarch mixture and heat and whisk until soup is slightly thickened
correct seasoning
ladle into heatproof serving bowls
top each with a spoonful of whipped cream
slip under broiler until cream is well glazed.
