Default Skillet Chicken w/sauce

1 chicken (cup up w/skin, as if to fry)
1/2 Stick of Butter (add more if needed)
Salt & Pepper

Put butter in skillet and heat to medium/high (prox 375). Salt and pepper chicken. Do NOT flour! Brown chicken ... and as it gets crisp remove.

Cut the following into small pieces:

1 cup mushrooms (or just use a small can or jar)
1 can pitted ripe olives
1 small jar/can of pimientoes
1 cup celery
1 garlic clove

When the chicken in out of the skillet, add the above to grease and cook until browned slightly. Remove and set aside.

Now, put chicken back into the skillet. Pour vegetable mixture over the chicken. ADD TWO CUPS OF WHITE WINE (some good kind you would drink) and let simmer until all is flavored and the chicken almost falls off the bone.

Note: Because of the "step-by-step" instructions, this sounds much more trouble to make than it is. Actually, quite easy and very good too! I serve it with rice and a steamed vegetable of choice.

KK and Heather .... Love sipping wine while I'm cooking too!

Julia Child is my HERO! I've actually read her "Mastering the Art of French Cooking" cover-to-cover at least three times. It's still my Cooking Bible!

Anything my grandmothers and mother didn't teach me about cooking, Julia Child did!

Ahhh Julia The Great. I loved watching her whenever she was on Good Morning America and Charlie was "helping".
