Heck...I can't spell it, just know it's good!
1 pound boneless, skinless chicken breasts, cut in strips
one large onion, sliced
1 envelope Fajita mix powder
2 Tblsp. oil
2 Tblsp. red wine vinegar
1/4 cup water
shredded sharp cheddar cheese
6 flour tortillas
Mix together Fajita mix, oil, vinegar and water. Pour over chicken and onions and marinate about 15 minutes.
In non-stick pan, over med. high heat, cook chicken and onions, with marinade, until done.
Lay 3 tortillas on a cookie sheet, evenly divide the chicken and onions over the tortillas. Top with as much shredded cheese as you like (and we like sort of a lot!) and top with 3 remaining tortillas.
Cover tortillas with foil and bake at 350 for about 15 minutes or until nice and melty.
I serve it with sour cream and salsa.
(I've been known to try this with steak too and it's great!)
