Sky-high Brunch Bake 1 pkg(17.3) oz frozen puff pastrey (2 sheets) thawed
6 eggs
1c ricotta cheese
dash hot pepper sause
2pkg (10oz ea) frozen spinach thawed well drained
4 slices cooked bacon, chopped
1-1/2C shredded chedder cheese
1C chopped red pepper
1. Preheat oven 400
2. unfold pastry sheet and roll out to about 11" square and one into a 12" square.
3. line bottom and side of greased springform pan with 12" pastry sheet.
4. Beat eggs in med bowl with a wisk reserve 1 T of eggs set aside
5. add ricottacheese, pepper sauce, and spinach to remaining eggs mix well until blended.
6. layer half of bacon , cheese, spinach egg mixture and red peppers in pastry lined pan and repeat layers.
7.place remaining sheet over mixture fold and tuck pastry edges in pan. pinch edges to seal. brush top with reserved egg. cut 5 or 6 slits in top crust to allow steam to escape.
