Default What do you do with leftover chicken or turkey?

I know it's not Thanksgiving, but I'm curious about everyone's answers:

What do you do with the leftover turkey once Thanksgiving is over? Or, if you have a baked or rotisserie chicken and there are leftovers, what do you do?

At our house it's pretty much a tradition to make turkey pasta salad, so we'll do that sometimes with chicken, too. I really like rotisserie chicken salad, though, so sometimes I'll do that.

I don't think I've ever had turkey soup, sounds interesting. Do you have a recipe for it?

Instead of cashew chicken my grand daughter made cashew turkey. It was really good.

We make turkey enchiladas, turkey salad, turkey soup, turkey jerusalem.

We do much of the same with rotisserie chicken if there is some left.

Also, recently did the "Leanne Ely's Rubber Chicken" second day recipe on the FlyLady site.

Was very yummy!
