I once read that when making a large batch of scrambled eggs, you should add one more scrambled egg just before removing the pan from the heat. The exisiting heat will finish cooking the last egg and the late addition will result in a moister finished dish.

I prefer a moist scrambled egg!

I like mine moist. Sometimes I'll put some cheese in but not a lot. I also add some milk to the mixture all the time.
