Default Turbin of Sole

4 to 6 sole fillets*
1 tablespoon minced green onions & tops
1 tablespoon fresh chopped parsley
1 tablespoon chopped celery (very finely chopped)
1 clove garlic, minced
6 to 8 tablespoons butter
1/2 cup cracker crumbs (add salt & pepper)
1/2 pound crabmeat
1 egg
Lemon Juice (FRESH)

Freshen sole in ice cubes. Dry well and cut fillets into 1 1/2 inch strips. Grease muffin tin liberally with butter and fit fish strips in circle in each muffin hole. Chop vegetables together. Melt butter. Saute vegetables until limp. Then add cracker crumbs and crabmeat. COOL 'til warm, not cold. Next add beaten egg. Stuff sole lined muffin cups with mixture. Put small sliver of butter on each. Bake in preheated 350 oven for about 10 minutes ... or until done! Squeeze fresh lemon joice over each before serving.

* Flounder works well here too.

Note: Love making this ... but ONLY when I can get FRESH sole or flounder.

This sounds great! Do you think it would work with tilapia??
