Really depends of the dinner being prepared. If they happen to have brought the correct match like red that I can open and let breath before dinner is served, then I will open it. Whites I plan to have well chilled ,so I put their bottle in the fridge but explain the bottle may not be chilled enough to serve. But heck, I have some friends that just say put some ice cubes in the glass. I twitch slightly when they say that...............

| | | Like the rest of you it depends of the amount of folks. And the wine, and how well I know the folks. For instance I have a cranky cousin who would be miffed if I did not open the bottle, so I do....whether or not it goes with dinner. I say something like "Jo prefers a light white wine so she brought this lovely Reisling....So if you prefer white wine, we have a great choice tonight."
If it is someone who would not be hurt, or who I am very comfortable with, and they brought a wine that would not fit I would say "Oh, how lovely, but I had planned to serve ______ with dinner...would that work for you and I will save this to savor later". Or, Gosh, we have too many folks here tonight to get more than just a sip...should we open it or save it for later??
Often I will just ask if this is for now or later. I used to assume it was for the dinner, and find that often it wasn't. |

Excellent points made. Well handled. My wife and I make ever effort to create a dinner that the wine that our guests "usually" drink will be a good match. Many of our friends bring reds, but drink whites themselves and so most of our dishes will be served with our "house" wine. We inform our guests what we will be preparing upon invitation, so if they bring a match I`ll serve it, if I have time to chill it. When we bring wine , we bring what our friends mostly drink, as an exchange.
