Tex-Mex Burger with Sweet Chili Relish Serves 4 Ingredients: For the Burger Patties: 1 1/2 pounds ground chuck 1/4 cup red onion, finely chopped 1 glove garlic, crushed 2 teaspoons dried oregano 1 1/2 teaspoons ground cumin 2 burger buns cut in half 1 cup shredded iceberg lettuce 1/2 cup grated sharp cheddar cheese Kosher salt and fresh ground pepper Olive oil for brushing For the Chili Relish: 1 pound tomatoes, coarsely chopped 1 medium red onion, coarsely chopped 2 cloves garlis, crushed 2 - 4 jalepeno chilies, coarsely chopped 2 tablespoons Worcestershire sauce 1 cup brown sugar 2/3 cup red wine vinegar 2 teaspoons kosher salt To make the chili sauce, put the tomatoes, onion, garlic and chilies in a food precessor and blend until smooth. Transfer the misture to a saucepan, add the Worcestershire sauce, sugar, vinegar and salt. Bring to a boil, lower the heat to a simmer and cook, gently, refrigerate until ready to serve. In a medium size bowl, add the beef, onion, garlic, oregano cumin and somwe salt and pepper. Work with your hands until evenly mixed and sticky. Divide into 4 portions and shape into patties. Brush the patties with oil and grill on grill pan or broil for 4 - 5 minutes on each side until cooked through. Keep warm. Lightly toast the bun halves. Top each with shredded lettuce, a patty, some grated cheese and a large dollop of the Chili Relish. Serve open faced. From HAL's "Burger Wars" |
