Default Hot Tomale Pie

Hot Tomale Pie

Serves 6

1 cup yellow corn meal
1 pound ground beef
2 teaspoons chili powder
½ cup green peppers chopped finely
2 tablespoons oil
2 cups of canned tomatoes
½ cup chopped olives
1 teaspoon salt
3 cups boiling water
1 clove garlic, minced
¼ cup chopped onion
Cayenne pepper
1 cup of canned corn (whole kernels)

Stir corn meal into salted boiling water until thick, then place over in a double boiler and cover for 30 minutes.

Meanwhile saute green pepper, garlic and onion in oil. Stir in beef and cook until meat is cooked. Add remaining seasonings, tomatoes, corn and olives. NOTE: I always drain my meat before adding the seasonings and vegetables.

Spread bottom and sides of 1 ½ quart casserole with mush. Fill with cooked meat mixture.

Bake uncovered at 350 degrees for 1 hour.
