Vegetarian Chili Con Carne Preparation Time: 10 mins

Ingredients:
2 Tbsps. plus 2 tsps vegetable oil
1 Onion\cooked, diced
1 Red bell pepper\cooked, chopped
1/4 cup tomato paste
1 lb canned peeled tomatoes\cooked
1 packet taco seasoning mix
2 cups water
1 lb canned red kidney beans
1 lb button mushrooms, halved
Instructions:
Heat oil in a saucepan over a moderate heat; add onion and bell peppers and saute for 2 mins. Stir in tomato paste, tomatoes and their juice, taco seasoning, and water. Simmer for 20 mins, stir in red kidney beans and mushrooms; simmer for 5 more mins. Suggestion: Serve with rice or baked potato. |  Recipe Tools | | | | | |
