Pumpkin Oatmeal Breakfast Bars
makes 6 BIG Bars...2 points each
This is the base recipe...
2 1/2 cups uncooked oatmeal
2 tsp baking powder
1 cup FF skim milk
1/2 cup Eggbeaters
1/2 cup unsweetened applesauce
1/4 cup Splenda
1/8 cup Splenda Brown Sugar Blend
2 tsps pumpkin pie spice
1 tsp ground cinnamon
1 cup pumpkin (1/2 of 15oz can of Libby's)
1 tsp vanilla
Preheat oven to 350 degrees.
Spray an 8" square dish with PAM.
Combine wet ingredients.
Combine dry ingredients.
Stir dry ingredients into wet ingredients.
Pour into prepared baking dish.
Bake for 40-45 minutes, until inserted toothpick comes out clean.
Cool completely before cutting...and for an added treat, serve warm with a little bit of Log Cabin Sugar Free Maple Syrup and/or add some raisins, nuts and sliced apples to the mix! You can also add more pumpkin and spices.
I've also served this as a dessert with a spoonful of Cool Whip Free
