Default Depression Cake

Depression Cake

Cook 1 pound box raisins with 3 cups of water for 20 minutes. Drain.

Cook partly and add ½ cup shortening and 2 cups sugar to the raisins. Let cool.

Sift together and add to above mixture:
4 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cloves
1 teaspoon cinnamon

Add to batter:
1 cup water to thin
1 cup chopped nuts

Pour into 2 loaf pans and bake at 375 degrees for at least 45 minutes or until cake springs to the touch.

LOL why do they call it depression cake? Sounds good though!

During the depression, people couldn't afford a lot, but they still wanted to have cake to celebrate someone's birthday. Those items were reasonable then compared to chocolate, etc.

My mother made them for me.
