Miniature Cheese Cakes
36 midget (1 ¾ inch) paper cups
39 vanilla wafers
2 8 ounce packages of cream cheese, softened
1 cup sugar
2 eggs, beaten
2 teaspoons vanilla
1 teaspoon lemon juice
1 21 ounce can cherry pie filling
Extra cherries
Place paper cups in midget cupcake pans. Place vanilla wafer in each.
Beat cream cheese. Add next 4 ingredients. Beat well.
Divide between midget cups. Bake at 350 degrees for 12 - 14 minutes.
Cool.
Top each with 2 or 3 cherries and cherry filling.
Chill until set. |
