Default Coffe Flan

I noticed there were no flans so..............
1/2 cup sugar
2 whole eggs
2 egg yolks(I love those egg white seperators)
2 cups milk
1 tsp. instant coffee
1/4 tsp. ground cinnamon
Caramelize sugar over medium heat. As sugar melts turn down the heat until the sugar turns a brownish liquid. Watch so it does not burn! Pour into a 1 quart baking dish. Place the eggs and yolks in a blender and mix. Add the milk, coffee and cinnamon and mix once more. Set the baking dish in a pan deep enough to add hot water halfway up the outside of the flan dish. In a sense a double boiler. Bake at 325F for 1.5 hours until a knife inserted comes out clean. Let cool to the point it can be placed in a frig for 3 hours. To serve the flan, run a knife around the outside edge to free. Place a serving plate over the top of the flan dish, hold together and turn over to free flan to drop onto dish. A Mexican lady here told me how to make flan after I had said to her how I was having problems baking it right and burning it. It`s all in the water pan. She also told me about the trick with the plate and the flipping. Thanks Maria!
