Strawberry and Rice Pudding 1 qt fresh strawberries, washed and stems removed
3/4c sugar,
1 lime, juiced
3/4 uncooked rice
1qt milk
1/2t salt
1t vanilla
2T rum
2c whipped topping
1. slice strawberries, set 8 aside for garnishing, sprinkle sliced strawberries with 1/4c sugar and lime juice.
2. Bring rice, milk, and remaining 1/2c of sugar to a boil in saucepan, stir 1 or 2 times reduce heat,cover and simmer for 25 minutes till most of milk is obsorbed and the rice is tender add vanilla and rum and cool.
3. fold in sliced strawberries and 1&1/2 c whipped cream but in dishes and garnish with strawberry and whipped cream. |  Recipe Tools | | | | | |
