Default Scottish Shortbread

This is a recipe for Scottish shortbread - easy method!

half a pound of butter
10 ounces plain flour
6 ounces cornflour
4 ounces castor sugar.

Melt butter in microwave.
Sieve dry ingredients together
Add melted butter and mix well.
Press into greased swiss roll tin
Bake in oven gas 3 for 1 hour
Remove from oven, mark into squares and sprinkle with castor sugar.
Return to oven for a further hour with the heat off.
Remove from tin and cool completely.
Store in an airtight tin.
delicious with coffee or even a wee half! ( of whisky!!)
