This is a Taco Salad that has a little different twist. My Dad could actually eat it without it upseting his stomach.
Taco Salad
Ingredients
1/2 lb. ground beef
1/2 c chopped onion
2 tsp chili powder
1 16 oz can kidney beans, drained
1/2 lb Velveeta cheese, cubed
2 c. chopped tomato
4 c. crushed corn chips
1/2 c. Catalina dressing
6 c. lettuce
Brown meat and drain. Add onion and cook until tender. Add beans and chili powder. Cover and cook over medium heat for 10 minutes. Combine remaining ingredients;add meat mixture. Mix lightly and serve immediately.
May top with sour cream and black olives.
