Cheesy Chicken Fajitas Cheesy Chicken Fajitas Makes 2 servings ½ cup red, green and/or yellow pepper rings ¼ cup sliced red onion ½ boneless chicken breast cut into strips 1 Tablespoon chopped green chilies, drained 1/8 teaspoon ground cumin ½ small clove garlic, minced 2 six inch flour tortillas 4 single cheese slices Salsa (optional) Spray large skillet with no-stick cooking spray. Add pepper and onion, cook and stir until tender. Remove from skillet. Spray skillet with no-stick cooking spray. Add chicken. Cook and stir until chicken is cooked through. Add cooked vegetables, chilies, cumin and minced garlic. Simmer 5 minutes. Place each tortilla on microwavable plate. Top each with 2 singles. Microwave each tortilla on High 20 seconds. Top each tortilla with half of chicken mixture. Fold sides to middle. Serve with salsa. |
