Tyropitas Tyropitas (Greek Appetizer)
1 package phyllo dough
¼ pound (1 cube) unsalted butter, meted
½ pound feta cheese, finely crumbled
4 eggs, lightly beaten
¼ teaspoon freshly ground pepper
Preheat oven to 375 degrees F. Lightly butter a large cookie sheet. Combine cheese, eggs and pepper. Unroll the phyllo dough, keeping unused portion covered with a towel.
Place one sheet of phyllo dough on a large cutting board. Brush lightly with melted butter. Top this sheet with another sheet and lightly butter. Repeat once more (3 layered, buttered sheets). Evenly cut the the sheets into 4 strips, lengthwise. A wheel cutter works best. At the base of each strip, place a generous teaspoon of the egg mixture. Fold the bottom edge of the strip over the mixture and even with the left side of the strip forming a triangle.
Continue folding, as you would a flag, until a complete triangle is formed. Place the tyropitas on the prepared cookie sheet. Brush each lightly with butter. Place in middle of oven and bake until puffy and golden brown, about 15 minutes. Immediately remove from sheet to cooling racks.
Serve warm or at room temperature. |
