Smoked Chicken and Mushroom Pasta
1tbs. olive oil
2 garlic cloves minced
1/4 cup green onions finely chopped
6 oz. total mixture button, shiitake, porcini mushrooms
8 oz. smoked chicken cut into bit sized pieces
3 oz. oil packed sun-dried tomatoes thinly sliced
1/4 cup chopped oregano or halved for dried oregano
1 to 1.5 cup low sodium chicken broth
9 oz. fusilli pasta cooked al dente and drained
6 oz. provolone or other white cheese
Preheat oven to 400 degrees. In a large skillet heat olive oil over medium heat and cook onions and garlic until lightly browned, about two minutes. Add chicken, mushroons, sun-dried tomatoes and orgegano. Cook for one minute stirring. Add 1 cup broth, reduce heat and simmer 4 to 5 minutes till slightly reduced. Now add the pasta and toss to coat. Transfer to a 2 quart baking dish. Top with cheese and bake for 5 to 10 minutes or until cheese has melted. To make ahead up to 24 hours, increase the broth to 1.5 cups and baking time if needed.
Makes 6 main dishes.
