Rosie,
I found a bunch that look interesting (unfortunately on another site). If they turn out I'll post them over here. I've made the breakfast strata in the past, but this time I want to prepare something this week and throw it in the oven on Xmas morning while the kids are unwrapping gifts.

I also found recipes for an asparagus casserole and glazed carrots that are made both ahead and frozen. I hate preparing vegetables for Christmas dinner so I will try these in advance. Aside from the sweet potatoes and mashed potatoes, they are rarely eaten! I stopped even serving a salad about five years ago!

Susan, I actually saw an interesting fruit casserole this morning on TV on Mr. Food. (mrfood.com) You might check it out!


Fruit Foster
Air Date: 12/12/2006
6 to 8 servings

3/4 cup packed light brown sugar
1/2 cup (1 stick) butter
1 (29-ounce) can pear halves, drained
1 (29-ounce) can peach halves, drained
1 (20-ounce) can pineapple slices, drained
1 (11-ounce) can mandarin oranges, drained
1 (6-ounce) jar maraschino cherries, drained
  1. Preheat the oven to 325°F.
  2. In a medium saucepan, combine the brown sugar and butter over medium heat until the butter melts and the sugar is dissolved, stirring constantly; remove from the heat.
  3. In a 9" x 13" baking dish, combine the remaining ingredients; mix well then pour the melted sugar mixture over the fruit.
  4. Bake for 55 to 60 minutes, or until hot and bubbly. Serve immediately.

I did glazed carrots on Friday night & surprisingly, every single plate was cleaned--everyone seemed to like the carrots! I was a llittle worried about that ahead of time.

This sounds like it would be good over vanilla ice cream. May have to try it

Now add the pasta and toss to coat. Transfer to a 2 quart baking dish. Top with cheese and bake for 5 to 10 minutes or until cheese has melted. To make ahead up to 24 hours, increase the broth to 1.5 cups and baking time if needed.

Makes 6 main dishes.
