I make something very much like this. I call it Tortilla Vegie Bake. It is a terrific potluck dish. I take salsa and sour cream to top it.
Sometimes I use frozen diced mixed vegies besides the corn, add a layer of cream or cottage cheese blended, and then I call it Confetti Tortilla Pie. |
