I love them roasted. I like red potatoes, washed, not peeled, and cut into large chunks, spread on baking sheet in a single layer. Sprinkle with onion, drizzle a little EVOO, rosemary and salt and pepper to taste. Roast in a 400 degree oven 20-25 minutes. Quick and easy! I also do this with many other vegetables (minus the rosemary). Oven roasting gives them a bit of caramelization and makes them yummy.
